For the Baby Corn Fritters:
- 200g baby corn, cleaned and sliced
- 1/2 cup all-purpose flour
- 1/4 cup corn flour
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon red chilli powder
- ½ teaspoon pepper powder
- Salt to taste
- Oil for deep frying
For the Manchurian Sauce:
- 1 tablespoon finely chopped garlic
- 1 tablespoon finely chopped ginger
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped bell peppers
- 2 tablespoons of soy sauce
- 1 tablespoon of tomato ketchup
- 1 tablespoon chilli sauce
- 1 tablespoon vinegar or lemon juice
- 1 teaspoon sugar ( to balance the tankiness)
- Salt to taste
- 1 tablespoon corn flour mixed with 2 tablespoons water (for thickening)
- Chopped spring onions for garnishing
Instructions:
Step 1: Prepare the Baby Corn Fritters:
- In a bowl, mix all-purpose flour, corn flour, ginger-garlic paste, red chilli powder, and salt.
- Gradually add water to make a thick batter.
- Dip each baby corn slice into the batter, coating it evenly.
- Heat oil in a pan for deep frying. Fry the coated baby corn slices until golden brown and crispy.
Step 2 : Make the Manchurian Sauce:
- In a pan, heat 1 tablespoon of oil.
- Add chopped garlic and ginger, sauté until aromatic.
- Add chopped onions and bell peppers, cook until they become translucent.
- Stir in soy sauce, tomato ketchup, chilli sauce, vinegar, sugar, black pepper, and salt. Mix well.
- Add the corn flour-water mixture to the sauce, stirring continuously until it thickens.
- Add the fried baby corn to the Manchurian sauce and toss until the baby corn is well-coated with the sauce.
Serve:
- Garnish with chopped spring onions.
