If there's one snack that's beloved across the Indian subcontinent and beyond, it's the humble samosa. These golden, crispy pastries filled with spiced potatoes, peas, and sometimes meat are a favourite street food and party snack. While they might seem a bit daunting to make at home, with a little practice, you'll be whipping up batches of these delicious treats in no time. So, let's dive right into it and make some delicious samosas together!

Ingredients:

For the dough:

  1. 2 cups all-purpose flour
  2. 1/4 cup vegetable oil
  3. 1/2 teaspoon salt
  4. Water, as needed

For the filling:

  1. 2 medium-sized potatoes, boiled, peeled, and mashed
  2. 1/2 cup green peas, boiled
  3. 1 medium-sized onion, finely chopped
  4. 2 green chilies, finely chopped
  5. 1 teaspoon cumin of seeds
  6. 1 teaspoon chilli powder
  7. 1/2 teaspoon turmeric powder
  8. 1 teaspoon garam masala
  9. 1/2 teaspoon amchur powder (dry mango powder)
  10. Salt, to taste
  11. Fresh coriander leaves, chopped
  12. Oil, for frying

Instructions:

Step 1 : Preparing the Dough:

  1. In a large mixing bowl, combine the all-purpose flour, salt, and vegetable oil. Rub the oil into the flour until it resembles bread crumbs.
  2. Add water gradually, kneading the mixture until it forms a smooth, firm dough of moderate consistency. Place a damp cloth over it and allow it to rest for at least 30 minutes.

Step 2 : Making the Filling:

  1. Heat one tablespoon of oil over medium heat in a pan. Add cumin seeds and coriander seeds. Sauté until they start to crackle.
  2. Add green chilies, and grated ginger. Now, add the boiled and mashed potatoes along with boiled green peas. Mix well.

  1. Sprinkle turmeric powder, garam masala, chilli powder, amchur powder, and salt over the mixture. Stir to combine all the spices evenly.
  2. Cook the filling for a few minutes until everything is well combined and aromatic. Finally, add chopped coriander leaves, give it a final mix, and turn off the heat. Let the filling cool down completely.

Step 3 : Shaping and Filling the Samosas:

Once the dough has finished resting, portion it into evenly sized balls. Roll each ball into a thin oval-shaped disc using a rolling pin.

Cut each rolled dough disc in half to form semi-circles.

Take one semi-circle and fold it into a cone shape, sealing the edges with a water-flour mixed paste.

Scoop a spoonful of the prepared potato filling into the cone. Be careful not to overfill.

Seal the open edges of the cone tightly, ensuring the filling is completely enclosed within the dough. Continue repeating this procedure with the rest of the dough and filling.

Step 4 : Frying the Samosas:

  1. Heat the oil in a deep frying pan or kadhai over medium heat..
  2. Once the oil is hot, carefully slide in the prepared samosas, a few at a time, without overcrowding the pan.
  3. Fry the samosas until they turn golden brown and crispy on all sides, turning occasionally to ensure even cooking.
  4. Once done, remove the samosas from the oil using a slotted spoon and drain them on paper towels to remove excess oil.

Serve the hot and crispy samosas with your favourite chutney or sauce.
