Ingredients:

  1. 500g boneless chicken, cut into bite-sized pieces
  2. 1 cup fresh coriander leaves, washed and chopped
  3. ½ cup fresh mint leaves, washed and chopped
  4. 2-3 green chilies, chopped (adjust according to spice preference)
  5. 4 cloves of garlic
  6. 1-inch piece of ginger, peeled
  7. 1 tablespoon ginger-garlic paste
  8. ½ cup yogurt
  9. 1 tablespoon cumin powder
  10. 1 tablespoon of coriander powder
  11. 1 tablespoon chilli powder
  12. ½ teaspoon turmeric powder
  13. Salt to taste
  14. 2 tablespoons of oil
  15. 1 medium-sized onion, finely chopped
  16. 1 medium-sized tomato, finely chopped
  17. 10 cashews (made into paste)
  18. Fresh coriander leaves and lemon wedges for garnish

Instructions:

Step 1 : Prepare the Green Paste:

  1. In a blender or food processor, combine the fresh coriander leaves, mint leaves, chopped green chilies, garlic cloves, ginger, and lemon juice. Blend until a smooth paste-like consistency is attained. Set aside.

Step 2 : Marinate the Chicken:

  1. In a large mixing bowl, place the boneless chicken pieces.
  2. Add the plain yogurt, cumin powder, coriander powder, chilli powder, turmeric powder, and salt to taste to the chicken.
  3. Mix well until the chicken is evenly coated with the marinade.
  4. Add the prepared green paste to the chicken marinade.
  5. Mix thoroughly, ensuring that the chicken is well coated with the flavorful mixture. Let it marinate for at least 30 minutes to allow the flavours to meld.

Step 3 : Cook the Chicken:

  1. In a pan, heat oil over medium heat and add cumin seeds and let them splutter.
  2. Add bay leaf, cinnamon stick, cardamom pods, and cloves for added aroma.
  3. Add chopped onions and sauté the chopped onions until they achieve a golden brown colour. Then add the tomato and cook until it softens.
  4. Then add turmeric powder, chilli powder and coriander powder. Mix it well, and then the oil starts to separate from the mixture.

  1. Add the cashew paste and cook for a few minutes until it thickens slightly.
  2. Now, add the marinated chicken to the pan. Stir well to combine.

  1. Cook the chicken on medium-low heat until it is tender and cooked through, stirring occasionally. This should take about 15-20 minutes.
