(A)INGREDIENTS 

(1)50 gm -Rice

(2)6 tablespoon -Jaggery 

(3)1/2tbsp -Cardmom powder 

(4)1/2 cup -Cashew abd raisin 

(5)1.5 litre -Milk

(B) PREPARATION METHOD 

(1 ) Wash and soak 50 gm of rice for 30 minutes. Take 1.5 litre of full cream milk in large pan.Heat the milk and let it come to boil. When milk start boiling, add soaked rice .

(2) Let the milk simmer on medium flame. Add dry fruits like cashew and raisins. Keep stirring at intervals to avoid spilling of milk. Let the rice cook and milk thickens. It is about 20 minutes. 

(3) Milk is thickening and rice is also cooked. But consistency should be more thick, so we have to cook the kheer further. Pressing rice while stirring make the kheer more creamy.

(4) After 30 minutes, milk has thickened little more but still liquidy , so cook little more.It has been 45 minutes, milk has become perfectly thick now.

(5) Turn the heat on low flame and add crushed cardmom powder and mixed them. Turn off the flame and let the kheer cool down for 5 minutes. 

(6) After 5 minutes add 6 tablespoon of grated jaggery. Adding jaggery at last prevent the milk from curdling. Serve it in bowl and garnish with some chopped dry fruits. Creamy delicious rice kheer with jaggery is ready.
